spinach smoothie bowl

During winter I do love a good porridge in the morning. It fills me up and lasts me well until lunch, so I definitely never need anything to snack on before that. This one is like a green veggie fruit soup, with the oats to give it some more body. Give it a try and I promise you will be pleasantly surprised.

Ingredients

  • 1 handful spinach
  • 4 mint leaves
  • 1/2 banana
  • 10 blueberries
  • 1 tsp boabab powder
  • 150 – 200ml oat mylk or any other plant based mylk
  • 3 large tbsp oats (preferably organic)

Method

  1. Add all ingredients execpt the oats to a blender, blitz for 30 sec minimum.
  2. Add the mixture to a bowl together with the oats, stir and pop into the microwave for 1.20 minutes after which leave to stand for another 2 minutes and then tuck in after adding your fav topppings.

Storing 

You can just leave the mixture in the fridge when you decide to make it the evening before. Then all you need to do is add the oats the next morning and heat according to the instructions above.
