Overnight oats

serves 1

in your blender:

150-200ml coconut mylk (or any other plant based mylk = milk)

1/2 tsp ground cinnamon

1/2 medium banana, peeled cut into chunks (could also be from your frozen stock)

1/2 apple, peeled and cut into chunks (frozen too is an option)

3 tbsp oats

home made nut granola

coconut shavings

1 medjool date, chopped (optional)

Whizz everything except oats, granola, medjool date and coconut shavings in your blender. One of my tricks is that when I buy fruit and feel I am going to end up with too much for one week I will freeze combinations together such as banana with blueberries, or apple or strawberries, grapes… whatever combination you feel like works. Another great one is pear and raspberry. 

Add the oats, mix well and pour mixture into an airtight jar or bowl and leave in the fridge overnight. Add the granola, date and coconut shavings in the morning before eating it or taking it with you.
