serves 4 as a side dish or 2 for lunch

1 bag of mixed salad leaves

1/2  tub of mixed mushrooms, finely sliced

1 green pepper, deseeded and sliced in thin strips

1/2 cucumber, peeled and cut into cubes

1 ripe avocado, peeled and sliced into cubes

zest of a lime, some juice to squeeze over the salad

fresh mint leaves, 8-10 adn then finely chopped

1/2 bag of sugar snaps, steamed for 3 minutes in boiling water, chopped

large handful of walnuts, chopped roughly

1 tbsp olive oil


1 garlic clove, crushed

French bread or gluten-free bread


In a large salad bowl mix the dressing ingredients…. lime juice, olive oil, s&p  and the crushed garlic. Then toss in the salad ingredients and toss well. Serve with some crusty french bread of gluten-free bread.
