Serves 2 or 4 as a side dish

Pew-heat your oven at 180C or fan assisted at 150C 

Roasting tin or oven dish

 

Ingredients:

1 aubergine, cut into cubes

1 courgette, cut into cubes

1 red peppe,r cut up in strips

1 red onion, cut into chunks

10 cherry tomatoes

olive oil

balsamic vinegar

Salt and Pepper

In the oven dish or roasting tin add all the vegetables and cover with a good lug of olive oil (3 tbsp), less of the Balsamic vinegar (1,5 tbsp)  and a grinding of salt and pepper.

Place in the middle of the oven and cook for 40 minutes stirring every 15 minutes. It’s delicious with either fish, chicken or tofu.
