serves 1

1/2 avocado

squeeze of 1/2  lemon

2 eggs, poached

drop of white wine vinegar (for the poaching water)


2 sllices of gluten-free toast ( wholemeal  or rye bread also okay)

s&p to taste

So simple but oh so delicious. It’s quick and easy once you learn how to poach eggs.

Bring a pan of water to the boil……. during which time mash up the avocado and squeeze some lemon juice over it to prevent it from going brown.

Add your bread to the toaster and get ready to poach your eggs….

Poaching eggs is about getting the water to the boil and adding a drop of white wine vinegar to the water. Crack the eggs into two small glass ramekins and once the water has come to the boil add the vinegar and give the water a good stir so it’s a little tournado…. then gently drop you 1st egg in and wait for the eggwhite to consolidate and then drop in your 2nd egg…. set timer for 3 minutes. Push bread down and when buzzer goes take out egg no 1 pat dry on kitchen paper, take egg no 2 out and repeat.

Cover toast in avocado msh and place eggs on top with s&p….. enjoy.
